Dum Chicken Biryani Topped With Coconut

A delicious Dum Chicken Biryani recipe prepared with Basmati rice, chicken and masalas. It is topped with ghee fried onions, seasonings and desiccated coconut and served with cucumber raita.

Preparation

Step 1 :

Soak rice for about 10 minutes and then boil it in water. After 10 minutes, drain out the water so that the rice remains half cooked (Do not cook it fully).

Step 2 :

Alongside, take all the dry spices and dry roast them for about 2- 3 minutes and crush them in a grinder.

Step 3 :

Take the curd and add half of the crushed masala to it. Add the ginger-garlic paste. Add the washed drumstick piece and gently poke each piece several times with a fork so that masalas seep in well. Cover it for margination for 30 minutes and then leave it in the refrigerator.

Step 4 :

Add 2 large spoons of oil in an open pan with lid (not a cooker). Add ginger-garlic paste (1 teaspoon) and a small chopped onion. Cook this on a low flame for 5 minutes till it turns pink. Add chicken along with the marinated mixture. Keep cooking for 10 minutes on medium flame. Toss the chicken for 5 minutes and cook for another 10 minutes till the chicken turns reddish.

Step 5 :

On the other side, take a spoon of ghee and fry the lengthwise cut onions along with two bay leaves. Turn off the flame when onions turn pink.

Step 6 :

Toss the chicken one last time. Now add a layer of rice topped with some pink onions and a bay leaf, some mint leaves and spread some of the masala.

Step 7 :

The procedure is to be repeated and in 3 layers, the dish with the quantity mentioned will be ready to be cooked under dum (high steam).

Step 8 :

Last and final step. Place the lid on the open pan and if required, seal it from all sides with some atta (so that it is tight). Cook the biryani on low flame for 20 minutes. After 20 minutes, remove the lid and add the saffron and a spoon of ghee on the top. Sprinkle the desiccated coconut on the top layer.

Step 9 :

Whisk some curd. Add a bit of salt, crushed pepper, coriander and crushed cucumber to prepare raita. Serve this along with the mouth-watering biryani.
