Manchurian Dosa with Indian Schezwan Paste

This unique recipe is a fusion of Indian and Chinese food. There is a mix of authentic Rayalaseema chutney with a combination of Indian style Schezwan paste.

Cooking Steps

Procedure for the Indian Schezwan paste

Step 1 :

Into the grinder goes ripened chillies, tamarind pulp, turmeric powder, jaggery and salt. Blend it into a fine paste. Now in a kadai, heat a tsp of oil and add mustard seeds.

Step 2 :

Heat it till the seeds pop, then add asafoetida and turn off the flame instantly. Add this tadka mixture to the paste that we just made. Indian Schezwan paste is done.

Step 3 :

Tip- If the paste is too spicy, add some roasted chana dal powder and mix well to balance the flavour. This paste will be used for the dosa.

Procedure for the Manchurian Dosa

Step 1 :

Add cooking soda and salt to the batter. Also, add water till you get the desired dosa consistency. Now onto a heated tawa, grease some oil.

Step 2 :

Once the tawa is heated, pour a scoop of batter and spread it across in circular motions. Add some oil to dosa. Once you get your desired colour, apply Schezwan paste on the inner side of the dosa.

Step 3 :

Squeeze some tomato juice, add chopped tomatoes, coriander, onions, put pieces of Manchurian balls, and fold the dosa. Flip it on the other side. Serve it on to the plate with the Spicy Onion Chutney.

Procedure for the Spicy Onion Chutney

Step 1 :

Excluding onions, add rest of the ingredients to a grinder and churn it well until you get a fine powder consistency. Tip- check for the taste here, adjust the spices as per your requirement. You can’t adjust the taste once you add onions.

Step 2 :

Now add onions into the grinder with the powder and blend it. Do not make it into a fine paste. Onions should be course in nature. Spicy onion chutney is done.

Step 3 :

Serve Manchurian dosa with spicy onion chutney.
