Broccoli Almond Soup

A thick broccoli-almond soup with the flavours of pureed broccoli and milk! It is a quick and healthy recipe to start your dinner.

Preparation

Step 1 :

Heat 1/2 tsp of butter in a pan.

Step 2 :

Add onions and fry for a minute. Add almonds and broccoli florets and a pinch of salt.

Step 3 :

Add 2 cups of water. Cook on a high flame for 4 minutes. Cover and let the broccoli soften on low flame for another 6 minutes.

Step 4 :

Remove from the flame and allow it to cool a little.

Step 5 :

Once it becomes slightly cool, blend it till smooth. You can remove the excess water before blending.

Step 6 :

Heat 1/2 tsp butter in the same pan and transfer the blended mixture into the pan.

Step 7 :

Add milk, cornflour mixture and cook on high flame for 2-3 minutes.

Step 8 :

Adjust the salt. Garnish with ground pepper and serve hot.
