Preparation
Step 1 : Potato Filling
Grate potatoes (3-4) and sauté them with onions. Add chilli flakes and salt.
Step 2 : Red Beans Filling
Boil red beans with salt and once dried, add chilli powder and chilli flakes.
Step 3 :
Take a baking bowl and line it up with garlic butter. Place a tortilla wrap (large) and shape it according to the baking mould. Now, put a thin layer of tomato sauce and add the red beans filling. Top it with grated cheese. Put another tortilla wrap over it and slightly press it. Over this layer, put a thin layer of mint mayonnaise.
Step 4 :
Add the potato filling, leftover beans and grated cheese. Top it with another tortilla wrap and press it to tighten everything into the mould. Bake for 20 minutes at 200 degree Celsius.
Step 5 : Salsa dip
Cut chunks of onion, tomatoes and green mango and give a slight mix in a blender. Now, top it up with lemon juice, salt, pepper and coriander.
