Honey Ginger Cookies

Cookies are not just a snack item but a nostalgic bundle of childhood memories. On one such visit to Kodaikanal, I tasted Ginger Honey Cookies at a Tea Cafe and the taste remained with me ever since. My recipe is an Indian twist to the old age European cookie recipe.

Preparation

Step 1 :

Preheat the microwave on convection mode at 180 degree Celsius. Take a baking tray with parchment paper.

Step 2 :

Alongside, sift the oats, maida, baking powder and baking soda.

Step 3 :

Add grated ginger, cinnamon powder and honey.

Step 4 :

Mix together and form a dough.

Step 5 :

Divide into 16 pieces and roll them into small balls. Then slightly flatten each of the balls on parchment paper.

Step 6 :

Bake in convection mode for 10-15 minutes or until golden brown.

Step 7 :

Leave it for 5 minutes to cool down.
