Cream of Mushroom Soup

Mushrooms - my 'best friend' ingredient. These magic buttons are full of Vit D, Potassium, protein and fiber. When you have a bad cold and in need for something filling - turn the mushrooms into a soup. Its flavour enhances multifold when together with roasted garlic and fresh basil leaf.

Preparation

Step 1 :

Roast finely chopped garlic in little oil till light brown and keep aside.

Step 2 :

In the same oil saute roughly chopped mushrooms, add onion after 3-4 min and saute both together till almost done. Cool them.

Step 3 :

Purée in blender, add salt and pepper.

Step 4 :

Add butter to the same pot add butter to just melt it. Add oregano. Ensure not to burn it as it tends to get burnt very quickly. Add the purée. Give it one big boil and switch off the heat. Add preboiled full cream milk. (You may increase or decrease milk quantity depending upon the consistency you prefer). Top it with roasted garlic.

Step 5 :

Garnish with fresh basil. Serve warm with croutons or bread of your choice.
