Smoked Egg

It is a healthy breakfast item with less oil, lots of vegetables and smoked egg which is a good source of protein.

Preparation

Step 1 :

Finely chop capsicum, carrot, onion, broccoli, tomatoes and green chilly.

Step 2 :

Take a pan and add 2 spoons oil to it. Let it heat for 2 minutes. Add onions and green chilly. Let it turn a little crispy and then add capsicum, carrot and broccoli. Toss it for 5 minutes. Once it gets par-cooked, add tomatoes.

Step 3 :

Take eggs, crack it and put them in directly in the pan (crack it very gently, the yolk should remain intact).

Step 4 :

Sprinkle salt, pepper, chillies and oregano over it. Cover the pan with a lid for 2 minutes.

Step 5 :

Take a coal in a big spoon, burn it for 2 minutes and then add oil to it. Open the lid, put the spoon inside the pan and cover it again for 5 minutes.

Step 6 :

Open the lid and take out the smoked egg on the plate. Put some coriander over it and then serve it with ketchup.
