Bean Salad

A healthy bean salad accompanies chips for a snack, appetizer or side dish.

Preparation

Step 1 :

Soak the red beans for a minimum of 5 hours or overnight. Boil the red beans in enough water for 60-80 minutes until it is soft/well-cooked (depends on the beans).

Step 2 :

Strain it out and let it cool down. Slice the ingredients.

Step 3 :

Boil the ladies finger/okra for 1 minute in hot water. Remove it out and slice it.

Step 4 :

In a mixing bowl, mix the boiled beans, sliced tomatoes, sliced ladies finger, sliced olives, chopped spring onions/sliced onions, chopped fresh coriander.

Step 5 :

Add olive oil, salt, pepper, coriander powder into the salad mixture. Adjust the taste. Mix them well. Serve it with potatoes chip/ nachos.
