Wheat Flour - Walnut Carrot Cake

This cake is moist and absolutely delicious. The addition of carrots, olive oil and yogurt makes it healthy too. Make this cake for a tea or kitty party or serve it as a desert after dinner, you are sure to earn a lot of appreciation for the same!

Preparation

Step 1 :

Grate carrots finely and keep aside. Sieve maida, wheat flour with baking soda and baking powder. Set aside.

Step 2 :

In a mixing bowl, add curd, sugar, milk and olive oil. Mix well until sugar completely dissolves.

Step 3 :

Add cinnamon powder, vanilla essence and give it a quick stir. Finally fold in carrots. Add maida and wheat flour mixture.

Step 4 :

Whisk it well to form a smooth, creamy and flowing batter. Add chopped walnuts to the batter.

Step 5 :

Preheat oven at 180 -degree C. Grease the baking tray with butter and sprinkle some flour on top of it. Bake the cake at 180-degree C for 20-25 minutes or until the toothpick inserted at the centre comes out clean.

Step 6 :

Allow it to cool completely and enjoy this healthy and tasty cake.
