This is a yummy and healthy South Indian starter that can be made instantly with readily available ingredients at home. You are sure to love it once you taste it!

Preparation

Step 1 :

Finely chop the onions, tomatoes and green chilli.

Step 2 :

Dice the leftover idlies.

Step 3 :

In a pan, heat oil and add chopped onions. After 3 minutes, add tomatoes, ginger and garlic paste, green chillies, turmeric powder, chilli powder and salt. Sauté well till the oil comes out.

Step 4 :

At this stage, add coconut milk and mix well. Now add the diced idlis, pepper powder and mix gently on slow flame for 2 minutes. Remove the pan, add lemon juice and garnish with cashews, curry leaves and coriander leaves.

Step 5 :

Make the ginger and garlic paste by smashing them together.
