These super soft rainbow cupcakes are a delight to the taste buds. The bright colours and delicious flavour of vanilla make them a star of any birthday party or family get-togethers. Specially kids become attracted to these. So, if you want to impress your valuable guests (specially the smaller ones), just go for these delightful cupcakes. Ingredients

120 gm All purpose flour (Maida) 140 gm Powdered sugar

1.5 teaspoon Baking powder 40 gm Butter at room temperature

120 ml Milk 0.5 teaspoon Vanilla essence

1 Egg Pinch of Salt

Food colors of your choice(red, green, orange and yellow)

Cooking Steps

Preparation

Step 1 :

Preheat the oven at 180C with both rods on for 10 minutes.

Step 2 :

Sieve together flour and baking powder.

Step 3 :

Using a hand blender, mix butter and sugar until it turns light and fluffy. Add milk, egg, salt and vanilla essence gradually in this mixture.

Step 4 :

Add the dry ingredients with wet ingredients and mix gently with cut and fold method, do not overmix it.

Step 5 :

Now divide the batter into four equal parts and mix food colours of your choice. Take cupcake moulds or cupcake tray and start to fill the moulds in layers. Put a layer of red, then yellow, then green and continue filling all the cups in this manner.

Step 6 :

Remember do not fill the cups up to the top, always leave some space at the top because the cakes will rise.

Step 7 :

Bake them in preheated oven for 15 to 20 minutes. Keep an eye on them as overbaking will fade the colours and the time varies from oven to oven.

Step 8 :

Check the cakes after 15 minutes by inserting a toothpick, if they come out clean then it is done. Serve them as it is or top it with some chocolate syrup, sprinkles and silver balls.
