This is a no bake cheesecake that melts in the mouth and is a fitting tribute to the king of fruits - MANGO. Also perfect for summer.

Step 1 :
Crush the biscuits in a ziplock bag and make fine crumbs. In a mixer, add the crumbs and melted butter and blend. Line the base of a cake tin with this biscuit base. Refrigerate for 30 minutes.
Step 2 :
In a muslin cloth, put the curd and allow the excess water to drip off. This should be hung for a minimum of 1 hour.
Step 3 :
Take the hung curd in a mixing bowl, add the sugar (preferably powdered), and mix well. Do not mix with a blender. Gently cut and fold the mixture so that the sugar spreads out evenly. Taste the mixture. If you need more sweetness, add more sugar.
Step 4 :
In a small bowl, put the gelatin and add 4 tsp of water. Microwave for 30 seconds. Allow this to cool off completely and add this solution to the hung curd mixture.
Step 5 :
Pour the hung curd over the biscuit base. Take 1 mango and scoop out all the pulp. Put in a hot pan with water and allow the pulp to reduce. Cool this off.
Step 6 :
Cut the other mango and makes cubes for garnishing the cake. Pour the mango liquid over the hung curd. Garnish with mango cubes and refrigerate for at least 30 minutes. Your cake is ready to eat.
