Tiranga Bread Pakora

The tiranga bread pakora is a spicy potato stuffed bread pakora, accompanied by two chutney layers on either side. Offering a tricolor look and enhanced taste, it’s a "tangy tiranga twist" to the popular and traditional street side food of India.

Cooking Steps

For Batter

Step 1 :

In a mixing bowl, take all the ingredients except water and mix well.

Step 2 :

Now, add around 1/2 cup of water slowly and whisk it well to make a smooth batter, neither thick nor too thin. Keep aside.

Step 3 :

Add a few drops of hot oil when you heat the oil for deep-frying.

For Potato Stuffing

Step 1 :

Boil the potatoes. When cooled down, peel and mash the potatoes.

Step 2 :

In a bowl, take mashed potatoes and all other ingredients for stuffing, mix well. Keep aside

For Green Chutney

Step 1 :

Rinse the coriander leaves and mint leaves well in water and roughly chop them.

Step 2 :

In a grinder jar, take chopped coriander leaves, mint leaves, raw mango (peeled and cut), chopped green chilli, peeled garlic cloves and salt.

Step 3 :

Grind it to a smooth chutney.

Step 4 :

If the raw mango is not sour enough then add few drops of lemon to taste.

Step 5 :

Remove the chutney in a bowl and keep aside.

Assembling Pakora and Frying

Step 1 :

Heat oil in a deep fry pan.

Step 2 :

On a chopping board, take 4 slices of bread and spread it.

Step 3 :

Take one slice, spread tomato ketchup evenly on it, cover it with another slice.

Step 4 :

On top of this covered slice, spread the potato stuffing evenly, cover it with the 3rd slice.

Step 5 :

On top of this 3rd covered slice, spread green chutney evenly and finally cover it with the fourth slice. It will look like a club sandwich of 4 slices.

Step 6 :

Take that entire sandwich in hand and gently dip it in the besan batter, coating all sides of sandwich with the batter.

Step 7 :

Take care to not to keep the sandwich in the batter for a long time as it tends to break.

Step 8 :

Slid the batter coated sandwich in hot oil in the frying pan.

Step 9 :

Fry the bread pakora on medium flame till they are crisp and golden brown.

Step 10 :

Drain on kitchen towel or tissue, so that excess oil is absorbed.

Step 11 :

Cut the bread pakora into 4 pieces diagonally, and serve hot each piece on the platter with layer faces upside.
