Gajar ka Halwa (Carrot Halwa)

Gajar ka halwa is a sweet dessert pudding originating from the Indian subcontinent, associated mainly with North India. It is prepared by placing grated carrot in a pot containing a specific amount of milk and sugar. The mix is then cooked while stirring regularly. The sweet dish is often served with a garnish of almonds, raisins and cashews. The dessert is favourite all over Northern India. It is traditionally eaten during festivals, specifically in winters.

Preparation

Step 1 :

In a kadhai or a deep thick bottomed pan, add milk and bring it to boil.

Step 2 :

Rinse, peel and grate the carrots, chop the nuts and grate the fresh coconut while the milk is boiling.

Step 3 :

When the milk comes to bubbles, add grated carrots and cardamom powder and bring the mixture to a boil on a medium flame.

Step 4 :

When the mixture is boiling, keep stirring it regularly and change to low flame.

Step 5 :

The milk will start to reduce, keep stirring it in between.

Step 6 :

When the milk is reduced to 75%, add the ghee, sugar and stir well. Continue to cook on low flame.

Step 7 :

Towards the end, add in the chopped nuts, grated coconut and raisins and cook for few more minutes till all the milk is reduced. Switch off the flame.

Step 8 : Garnish & Serve with

Garnish it with nuts and serve hot/cold as per your preference.
