Chifferi Rigati with Cheese

An all-time favorite and yes, it needs no introduction. A delicious dish with lots of cheese and a hint of herb makes it an ideal course for every age.

Preparation

Step 1 :

Cook pasta as per packet instructions.

Step 2 :

In a pan, melt butter, add flour and mix well making sure that there are no lumps. This is called a Roux.

Step 3 :

Add milk and whisk thoroughly until well blended and there are no lumps in it. Simmer for a minute.

Step 4 :

Add sage, cream cheddar cheese, mozzarella cheese, season with salt and pepper and mix. Cook for another minute until cheese melts and it's rich and creamy.

Step 5 :

Add boiled pasta and mix well. Dish out in a bowl, garnish with some oregano, chilli flakes and sage, serve hot.
