Preparation
Step 1 :
Sieve together all the dry ingredients twice. That is, both the flours, baking powder, baking soda, and salt.
Step 2 :
In a large bowl, whisk together the oil and sugar.
Step 3 :
Add in the eggs one by one, whisking after each add.
Step 4 :
Once blended well, add the crushed spice mix and vanilla essence, and mix well.
Step 5 :
To this mixture add the orange juice and honey, and mix.
Step 6 :
Now slowly add the flour mixture to this and fold in carefully.
Step 7 :
Take 3/4th of the dry fruits and dust them with little flour and add to the batter, mix.
Step 8 :
Add diced fruits too.
Step 9 :
Preheat the oven to 180 degree centigrade.
Step 10 :
Grease the cake tin.
Step 11 :
Sprinkle some sugar to cover the bottom of the tin. This is to crystalize the fruits. (But mine didn't work well, as midway I transferred to cooker, as power went off)
I believe brown sugar would work better for this.
Step 12 :
Now arrange the sliced fruits and the remaining dry fruits on the pan.
Step 13 :
Drizzle the grated coconut over this.
Step 14 :
Now pour the batter carefully.
Step 15 :
Bake for 35-40 minutes, until a toothpick inserted comes out clean.
Allow to cool, and then relish the fruit of your hard work.
