Besan Ka Kheer

Besan ka kheer is specially enjoyed in the winters. It is tastier than besan ka ladoo. I have used full cream milk which makes it delicious. The sweeteners used are jaggery and dates which make it tasty. You can prepare this kheer for your family and friends on any occasion.

Preparation

Step 1 :

Soak chuwara or dry dates in water and keep overnight.

Step 2 :

Heat a non-stick pan, add besan and roast it on medium flame. Stir the besan continuously otherwise the besan might get burnt. Roast it for 5 to 8 minutes, turn off the flame and transfer the roasted besan to a bowl.

Step 3 :

On a separate kadai boil the milk first. Then reduce the flame for 15 to 20 minutes. Milk will become little thicker than previous form.

Step 4 :

Now again heat a non-stick pan, add sufficient amount of ghee and heat the ghee for few second. Add the roasted besan and mix it with ghee..

Step 5 :

Take a grinder and grind the soaked chuwara or dry dates and make a fine paste. Remove the seeds of dry dates before grinding.

Step 6 :

Add the dry dates paste and jaggery to the boiled milk on a low flame. If you like you can add grated jaggery.

Step 7 :

Stir continuously until the jaggery and dry dates get completely mixed with milk. You can use as much jaggery as per your taste.

Step 8 :

Slowly add the roasted besan to this mixture and blend it well.

Step 9 :

The consistency of besan kheer should be little thick. Don’t add too much roasted besan otherwise the consistency of besan kheer may become too thick.

Step 10 :

Serve hot besan kheer on a serving bowl, add 1 tablespoon of ghee, top it with chirongi nuts and chopped almonds.
