Lifafa Paneer Paratha

Preparation

Step 1 :

Take 2 cups of wheat floor and pour 1 teaspoon of oil or ghee, add salt and enough water to kneed it into a soft dough. Keep it aside for 10 to 15 minutes.

Step 2 :

Chop the garlic as tiny as possible, fry it in ghee by simmering the gas, when it turns golden brown switch off the gas and remove only the garlic, keep it aside in a plate (It will be crispy and can be broken easily by hand).

Step 3 :

In the remaining ghee put cumin seeds, chopped green chillies and add grated paneer, salt, chaat masala, cumin powder, chopped coriander leaves, mix it and switch off the gas (it should not over cook as we are using this as paratha stuffing), sprinkle some lemon juice for flavor and keep it aside.

Step 4 :

Take the dough and make it into balls, put it on rolling board/roti making board and roll it out into a circle, sprinkle fried garlic over the roti and add the paneer stuffing before folding the roti from four sides so that it looks like an envelope.

Step 5 :

Place it on a hot tava/griddle and cook over medium flame. When tiny bubbles starts to rise on the surface, reduce flame. Spread 1/2 teaspoon oil around its edge with the help of spatula and cook for approx 30 to 40 seconds. Flip it and spread oil around it and cook for 30 to 40 seconds over medium flame.

Step 6 :

Repeat flip and press process until golden brown spots appear on both sides of paratha. (No need to spread oil after doing it once in previous steps). Transfer it to a plate. Follow the same process for remaining dough balls. Serve it hot with tomato sauce or curd.
