Bafla baati is made up of wheat flour(atta) doughs which is steamed and then baked in tandoor. It can be made plain or stuffed with different stuffings according to taste.

Preparation
Step 1 :
Add ajwain, salt, ghee and flour. Knead to make small doughs out of it. Let it stay for 5 to 10 minutes.
Step 2 :
Boil potatoes and peas. Peel and mash the potatoes. Add peas, salt and chilli powder to it.
Step 3 :
Flat the dough balls and fill the potato pea filling and again make the balls from it.
Step 4 :
Take a pan/kadai. Add water to it and let it boil. Putting a thick stand or plate at bottom, put small dough balls on it so that it doesn't touch water. Cover it with a lid and steam it for 10 minutes. Texture of dough will become soft.
Step 5 :
Remove the baatis and let them cool on a cloth so that extra water will be absorbed.
Step 6 :
Heat oven/tandoor. Put baatis inside it and bake it for 10 minutes until the colour changes to slight dark and texture becomes little tight. Remember to change the sides to cook appropriately. Remove them from the oven.
Step 7 :
Heat ghee in a pan. Break the baatis Little and put inside it. Serve hot.
