Preparation
Step 1 : For Chicken
In a bowl mix corn starch, all-purpose flour, egg, seasonings. Add cold water and mix till you get a smooth pancake-like batter. Next, cut chicken into cubes about an inch thick and add to the batter. Deep fry at medium-high flame till chicken is cooked or till you see a golden-brown colour. Don’t forget to remove excess oil.
Step 2 : For the Sauce
Mix all sauce ingredients in a bowl and set aside. Add more corn starch if you find the sauce to be a bit runny. Note that you don’t need any salt as the soy sauce adds enough saltiness to the sauce.
Step 3 : For Vegetables
Roughly dice vegetables and pineapple into medium pieces. Finely chop garlic.
Step 4 :
Pour oil in wok (or large saucepan) and place on high flame and add finely chopped garlic. Add onions and stir them till the onions go translucent. Now add rest of the vegetables and pineapple. Now add the sauce and mix it well. Cover the wok with a lid and let it simmer for 2 to 3 minutes.
Step 5 :
Also add the fried chicken pieces into the wok and gently mix again. Cook for one more minute and turn off.
