Spicy Tomato and Tamarind Soup

This delicious Asian recipe may be served as a soup or simply served at the end of a meal or as an accompaniment to steamed rice. Pepper is for colds and coughs, and turmeric heals wound, making this tasty healthy broth a great side dish to a simple stir fry dinner.

Preparation

Step 1 :

Dry roast the coriander seeds, cumin seeds, peppercorns, 4 to 5 pods of garlic and 5 of the curry leaves.

Step 2 :

let it cool. After they cool down, grind in a spice grinder along with turmeric and asafoetida. Grind it to a very fine powder. Set aside.

Step 3 :

Soak the tamarind in 1 cup of water let it soak for 10 minutes. Squeeze the tamarind to extract all the juices. Strain the liquid to get rid of the tamarind seeds. Take this tamarind juice, some salt, and 1 quart water into a pot over medium high heat and stir bring to a boil.

Step 4 :

Boil some hot water and drop in the tomatoes and let it boil for 3 to 4 minutes. Remove off heat and drain. Peel the skin and grind the de skinned tomatoes to a puree along with the tamarind puree.

Step 5 :

To this tamarind and tomato puree, add one cup water. Let it all come to a boil.

Step 6 : For the tempering

Heat ghee and oil in a pot over medium high heat. Add in the dry red chillies, mustard seeds, and the remaining curry leaves. Let it splutter. Pour this temping into the soup. Mix in the spice powder prepared earlier and salt and jaggery to taste. Let it boil for 2 minutes.

Step 7 :

Switch off the flame and add in the coriander leaves. Serve hot.
