Pumpkin Kheer

This recipe is connected to my childhood memories, my grandmother used to cook this for me.The core ingredient of this recipe is PUMPKIN, it is low in cholesterol and sodium and good source of vitamin E. This is a dessert having authentic flavors of Indian village and is beautiful in color and texture. It is well served with a THALI or it can be served chilled after dinner or lunch

Step 1 :

Soak half cup sago for 10 minutes

Step 2 :

Peel the ripe pumpkin and grate it finely.

Step 3 :

Turn a flame of gas on and put a cooker on it.

Step 4 :

Add 2 tbsp of ghee and allow it to heat.

Step 5 :

Add 3 to 4 cloves into the ghee, let it roast for a while

Step 6 :

Now add grated pumpkin into the cooker and saute it for 2 to 3 minutes.

Step 7 :

Now add soaked sago into the cooker, saute it for a while.

Step 8 :

Add half cup of water into the cooker, mix well and close the lid, cook till 2 whistles and then open the lid.

Step 9 :

Add 250 ml of milk to the cooker and continue stirring so that sago do not stick at the bottom.

Step 10 :

Once the sago is cooked well, add 250 ml milk again and allow it to reduce as per your required consistency.

Step 11 :

Now add half cup (or little less than that) of sugar into the cooker and cook for 2 to three minutes.

Step 12 :

Pumpkin kheer is ready. Allow it to cool well and serve it.
