Light, crunchy, and perfectly spiced, this no-fry poha chivda is a healthier take on a classic teatime snack.

Cooking Steps

No-Fry Poha Chivda

Step 1 : Roast the poha:

Preheat oven to 160°C (320°F). Spread thin poha (flattened rice, thin variety) in a single even layer on a large baking tray. Bake for 12–14 minutes, stirring once halfway, until the poha is completely crisp and light. It should snap when pinched — no chewiness. Set aside to cool.

Step 2 : Roast the nuts:

On a separate tray (or the same tray after removing poha), spread peanuts and cashews. Roast at 160°C for 8–10 minutes until golden. Add roasted chana dal (dalia) in the last 3 minutes. Watch carefully — nuts can burn quickly. Set aside.

Step 3 : Prepare the tempering:

Heat oil in a large kadai or wok on medium heat. Add mustard seeds and let them splutter. Add cumin seeds, curry leaves, and green chillies, slit — fry for 1 minute until the curry leaves turn crisp. Add raisins (optional) and dried coconut slices or desiccated coconut (optional) if using, and fry for another 30 seconds.

Step 4 : Add spices:

Lower the heat. Add turmeric powder, red chilli powder, sugar, and salt to the tempering. Stir quickly for 10 seconds — do not let the spices burn.

Step 5 : Toss everything together:

Remove the kadai from heat. Add the roasted poha and all the roasted nuts and chana dal. Toss gently but thoroughly until every piece of poha is coated in the turmeric-spiced tempering. Be gentle — the poha is delicate.

Step 6 : Cool and store:

Spread the chivda out on a large tray and allow to cool completely — at least 15 minutes — before storing. It will crisp up further as it cools. Store in an airtight container.
