A light and wholesome twist on comfort food, spaghetti squash tossed in rich marinara makes for a satisfying, oil-free meal.

Spaghetti Squash with Marinara

Step 1 : Roast the squash

Preheat oven to 400°F (200°C). Carefully slice 2 large spaghetti squash or yellow pumpkin in half lengthwise and scoop out the seeds. Brush the cut sides with olive oil and season with salt and black pepper. Place cut-side down on a lined baking sheet and roast for 35–40 minutes until the flesh is fork-tender.

Step 2 : Start the marinara

While the squash roasts, heat the remaining olive oil in a medium saucepan over medium heat. Add yellow onion, finely diced and cook until softened and translucent, about 6 minutes. Add garlic cloves, minced and cook for 1 more minute until fragrant.

Step 3 : Build the sauce

Stir in tomato paste and cook for 2 minutes. Pour in canned crushed tomatoes and add dried oregano, dried basil, red pepper flakes, sugar or honey, and a pinch of salt. Stir well to combine.

Step 4 : Simmer the marinara

Reduce the heat to low and let the sauce simmer uncovered for 20–25 minutes, stirring occasionally, until thickened and deeply flavoured. Taste and adjust seasoning.

Step 5 : Shred the squash

Remove the squash from the oven and let cool for 5 minutes. Flip the halves cut-side up and use a fork to scrape the flesh into long spaghetti-like strands. Season the strands lightly with salt and pepper.

Step 6 : Finish the sauce with basil

Remove the marinara from the heat and stir in half of the fresh basil leaves, torn. The residual heat will gently wilt the basil and release its fragrance.

Step 7 : Serve

Pile the squash strands into bowls or serve directly in the squash shells. Spoon the marinara generously over the top. Finish with parmesan cheese, freshly grated and the remaining fresh basil leaves, torn. Serve immediately.
