Soft, syrup-soaked malpuas paired with creamy rabri make this a festive treat that feels both indulgent and comforting.

Rabdi Malpua

Step 1 :

Boil the milk to prepare the rabri (thickened milk). Continue boiling until the milk reduces to roughly half its original volume.

Step 2 :

Now, combine the flour and the prepared rabri to form a smooth batter. If the consistency feels too thick, add a little more milk as needed.

Step 3 :

Let the batter rest for 30 minutes. Add the chopped pistachios to it. Ensure there are no lumps remaining; stir the mixture thoroughly until smooth.

Step 4 :

Heat some ghee in a frying pan or griddle (tawa). Once the ghee is hot, pour in a spoonful of the batter.

Step 5 :

Fry for a short while, then flip the malpua over and fry the other side until it turns golden brown. Continue this process to prepare all the malpuas.

Step 6 :

In a separate pan, combine the sugar, water, and yellow food coloring to prepare a sugar syrup (chashni) of 'one-string' consistency.

Step 7 :

Take the prepared Malpuas one by one, dip them into the sugar syrup, and immediately remove them. Do not leave them submerged in the syrup for too long.

Step 8 :

Your malpuas are now ready to eat! Garnish them with chopped pistachios. Serve piping hot.
