Little Millet Curd Rice

A light and cooling South Indian curd rice made with little millet, fresh curd, and a simple aromatic tempering.

Little Millet Curd Rice

Step 1 :

Boil 2 cups water, add the little millet, and cook until the millet becomes soft.

Step 2 :

Transfer the cooked millet to a mixing bowl and mash lightly.

Step 3 :

Add curd and milk and mix well to combine.

Step 4 :

Heat oil in a tempering pan. Add mustard seeds and allow them to splutter.

Step 5 :

Add urad dal, green chilli, ginger, and curry leaves; sauté briefly.

Step 6 :

Pour the tempering over the millet mixture. Add grated carrot, coriander leaves, and salt.

Step 7 :

Mix well and serve chilled, garnished with extra carrot and coriander leaves.
