Crispy outside, soft inside – vrat-friendly, no-onion-no-garlic cutlets with rock salt.

Raw Banana Patties

Step 1 :

Wash raw bananas. Cut off ends. Boil with skin in water for 8–10 mins until soft (fork inserts easily). Drain, cool slightly, peel, and mash smoothly in a bowl.

Step 2 :

To warm mashed banana, add arrowroot flour, coriander, green chili, ginger, roasted cumin, rock salt, and 1 tbsp melted ghee. Knead into a soft, non-sticky dough. (Add 1 tsp more flour if too wet.)

Step 3 :

Grease palms with ghee. Take lemon-sized portions, roll into balls, flatten into ½-inch thick round patties.

Step 4 :

Heat 2 tbsp ghee in a heavy skillet on medium-low. Place patties without crowding. Cook 2–3 mins per side until golden and crisp. Add more ghee if needed for next batch.

Step 5 :

Drain on absorbent paper. Serve hot with lemon wedges and green chutney.
