Italiana Tangdi Kabab
Step 1 :
In a bowl, mix hung yoghurt, mustard oil, red chilli, black pepper, oregano, Parmesan, salt, ginger-garlic paste, thyme, and parsley paste. Whisk till smooth. Marinate the chicken legs in this mixture, ensuring they’re well coated. Cover and refrigerate for at least 4 hours or overnight for best results.
Step 2 :
Preheat the airfryer to 180°C. Brush the marinated legs lightly with ghee. Place them in the airfryer basket and cook at 180°C for 18-20 minutes, flipping once midway, until golden and cooked through.
Step 3 :
For the smoky touch, heat a small piece of coal till red hot, place it in a small bowl within the chicken, drizzle ghee, cover, and let it smoke for 5 minutes. Serve hot with mint chutney and lemon wedges.
