Ande Ka Ghotala

This is my own recipe, a result of many trials and errors. A healthy breakfast option, it contains 4 eggs, paneer, cheese and beetroot. It can be enjoyed with slices of breads (greased with butter and heated on a pan).

Preparation

Step 1 :

Boil 2 eggs and beetroot. Grate the beetroot.

Step 2 : Boiled Egg Bhurji:

In a pan, heat 2 tablespoons oil. Add mustard, ginger, garlic, chilli and salt. Fry it for 2 minutes.

Step 3 :

Add onion and fry it for 5-7 minutes on a low flame.

Step 4 :

Cut 2 boiled eggs in 8 pieces each and add it. Fry for 5 minutes with lead covered.

Step 5 : Ande Ka Ghotala:

In a pan, add ghee, salt and half fry 2 eggs (make sure the yolk is not solidified). Switch off the burner. Place it on serving plate with the liquid yolk upwards.

Step 6 :

Top it with grated paneer, grated cheese, grated beetroot and coriander.

Step 7 :

Garnish with 2-3 spoons of mayonnaise/cheese spread (optional).
