Assam's most beloved fish curry — light, tangy and barely spiced, with river fish in a bright tomato broth.

Cooking Steps

Masor Tenga

Step 1 :

Rub fish with turmeric and salt. Marinate 10 minutes.

Step 2 :

Heat mustard oil until lightly smoking. Shallow fry fish 2–3 minutes per side until golden. Remove and set aside.

Step 3 :

In the same oil, add fenugreek seeds. Let them splutter for 30 seconds.

Step 4 :

Add tomato puree, turmeric, chilli powder and salt. Cook 5–6 minutes until oil separates.

Step 5 :

Add potato wedges. Stir and cook 3 minutes.

Step 6 :

Add 1½ cups of water and green chillies. Bring to a boil.

Step 7 :

Slide in the fried fish. Cover and cook on low heat for 8–10 minutes.

Step 8 :

Stir in lemon juice. Serve hot with steamed rice.
