Pork with Bamboo Shoot

An Assamese Bihu classic — tender pork slow-cooked with tangy bamboo shoot, ginger and chilli in mustard oil. No garam masala, no extra spices — just bold, honest flavour.

Cooking Steps

Pork with Bamboo Shoot

Step 1 :

Heat mustard oil in a heavy pan until it smokes lightly. Add sliced onions and fry until golden.

Step 2 :

Add ginger-garlic paste and dried red chillies. Cook 2 minutes until fragrant.

Step 3 :

Add pork pieces with turmeric and salt. Cook on medium-high heat, stirring, until pork changes colour — about 8 minutes.

Step 4 :

Add bamboo shoots and green chillies. Stir well to combine.

Step 5 :

Add 1 cup of water. Cover and cook on low heat for 25–30 minutes until pork is tender and oil surfaces.

Step 6 :

Remove lid and cook uncovered for 5 minutes until the gravy thickens.

Step 7 :

Garnish with fresh coriander. Serve hot with steamed rice.
