Rajma Quinoa

Preparation

Step 1 :

Take 1 cup of rajma that is soaked overnight. Add water to it and put it in a pressure cooker for around 30 minutes (they must become soft).

Step 2 :

Alongside, take 1 cup of quinoa and add 2 cups of water to it. Boil it on a medium flame for 20 minutes.

Step 3 :

Cut the tomatoes and keep it aside.

Step 4 :

Take a pan on medium flame and pour the oil. Once it gets hot, add the jeera seeds, cloves, crushed ginger, crushed garlic and onion. Sauté it for a minute and add garam masala, coriander powder and red chilli powder. Sauté it for a minute and then add the cut tomato.

Step 5 :

After 5 minutes, add the rajma and mix well.

Step 6 :

After 3-4 minutes, add the quinoa and cook for another 5 minutes. Add salt as per taste and ensure it gets blended well.

Step 7 :

Lastly, garnish with coriander leaves.
