Sweet Potato Salad

A vibrant, no-onion-no-garlic, cooling salad – naturally sweet, tangy, and packed with fibre.

Method:

Step 1 :

Steam or boil sweet potato cubes until fork-tender (8–10 mins). Do not overcook – they should hold shape.

Step 2 :

Drain and spread on a plate to cool slightly (5 mins).

Step 3 :

While sweet potatoes cook, dice cucumber, grate carrot, and chop apple (if using). Keep in a large mixing bowl.

Step 4 :

Whisk lemon juice, dissolved jaggery, rock salt, roasted cumin, black pepper, and sesame oil until smooth.

Step 5 :

Add warm (or cooled) sweet potatoes to the bowl with veggies.

Step 6 :

Pour dressing over. Toss gently to coat evenly.

Step 7 :

Mix in chopped coriander and mint.

Step 8 :

Sprinkle crushed peanuts/seeds and pomegranate arils.

Step 9 :

Serve immediately or chilled.
