Piña Colada Fried Rice

Piña colada fried rice is a tropical twist on the classic dish, bursting with sweet and savoury flavours. Made with juicy pineapple chunks, creamy coconut milk, and a hint of rum essence, it brings the island vibes to your plate. It’s a refreshing fusion that’s perfect for summer days or when you just need a quick escape to paradise.

Pina Colada Fried Rice

Step 1 :

Cut the pineapple in half lengthwise, keeping the green top intact. Using a knife cut around the edges and scoop out the flesh to create a bowl. Set it aside.

Step 2 :

Heat 2 tbsp of oil in a pan. Add cinnamon stick. To this add soaked and rinsed basmati rice, and sauté for a minute.

Step 3 :

Add a pinch of salt. Pour in water, coconut milk, and pineapple juice. Cook on low heat for 10-15 minutes until the rice is fully done.

Step 4 :

Heat 2 tbsp of oil in another pan. Add finely chopped garlic, ginger, and green chilies. Sauté for a minute.

Step 5 :

Toss in cashews, raisins, and peanuts, and fry until golden brown. Add chopped onions, red, green, and yellow capsicums, carrots, and cabbage. Sauté for 4-5 minutes.

Step 6 :

Add salt, black pepper, seasoning, and soya sauce. Mix well.

Step 7 :

Stir in the chopped pineapple pieces and cook for another minute. Add the cooked rice to the stir-fried vegetables and mix everything evenly.

Step 8 :

Sprinkle chopped spring onions on top. Scoop the fried rice into the pineapple bowl and serve hot.
