Eggless Lemon Cake

This cake is very flavourful, soft and easy to make. In this recipe, greek yogurt is used as a substitute for egg.

Step 1 :

Preheat the oven at 180°C and line the 9 inch cake pan with parchment paper

Step 2 :

In a large bowl, mix maida, baking soda, baking powder and 1 tbsp lemon zest.

Step 3 :

In another bowl, beat vegetable oil and castor sugar together.

Step 4 :

Add in greek yogurt, vanilla extract and lemon juice to it.

Step 5 :

Combine wet and dry ingredients in portions, alternating it with milk. Do not over mix the batter.

Step 6 :

Transfer the batter in to the cake tin and bake it for 35-40 minutes at 180°C. The cake can be layered with cream cheese and garnished with fresh strawberries.
