Step 1 :
Add water, salt, pepper and bring it to a boil. Lower the flame and cook till the broccoli is bright green in colour.

In a non-stick pan add olive oil heat it for few seconds add the ginger. Sauté until light brown, add the chopped onion cook till translucent, add the oregano and celery, add roughly chopped broccoli cook for 3 minutes.
Step 2 :
Add the apple. Cook for another minute. Add water, salt, pepper and bring it to a boil. Lower the flame and cook till the broccoli is bright green in colour.
Step 3 :
Strain through a soup strainer, do not discard the water.Cool the ingredients.
Step 4 :
Puree the ingredients by adding the remaining water. Simmer the soup for 2 minutes.
Step 5 :
Serve very hot / warm in a soup bowl garnished with Fresh cream and a few sprigs of oregano.
