Vegetable Dum Biryani

Preparation

Step 1 :

Soak rice in water for 45 minutes.

Step 2 :

In a heavy bottomed vessel, put all the vegetables, ginger -garlic paste, 3 tbsp. coriander leaves, 3 tbsp. mint leaves, half brown onions, 1 tsp cardamom powder, red chilli powder, turmeric powder, garam masala, lime juice, chopped green chillies and 5 tbsp. pure ghee. Mix well and keep aside for 20 minutes.

Step 3 :

In another vessel, put 5 litres of water.

Step 4 :

Add salt to taste and 1 tsp shahi jeera and potli masala. Cook rice in it till 60 % cooked.

Step 5 :

Pour half rice (60%) (parboiled rice) on the marinated vegetables and sprinkle 1 tsp green cardamom powder, 1 tsp garam masala, half mint leaves, half coriander leaves and half brawn onions. Repeat the layers once again.

Step 6 :

Warm the milk and slightly dissolve saffron in it.

Step 7 :

Sprinkle saffron on top, spread the remaining ghee on top.

Step 8 :

Seal the lid with flour dough.

Step 9 :

Cook on a high heat for 7 minutes.

Step 10 :

Then lower the heat.

Step 11 :

Keep on the tawa and cook for 20 minutes
