Delicious and healthy carrot quinoa muffins packed with nutrients and full of flavour!

Preparation

Step 1 :

Preheat the oven to 180-degree Celsius. Line a muffin tin with paper liners.

Step 2 :

Take a bowl and mix the cooked quinoa, whole wheat flour, brown sugar, cinnamon, baking powder and salt.

Step 3 :

In a separate bowl, mix the egg, buttermilk, yogurt, oil, and vanilla. Add the milk mixture to the quinoa mixture and mix again.

Step 4 :

Add the carrots and half of the almonds. Pour batter in the liners equally.

Step 5 :

Bake for 25 to 30 minutes or until an inserted tester comes out clean.

Step 6 :

Let it cool for 5 minutes.

Step 7 :

Remove the muffins from the pan. Once cooled, it is ready to serve.
