Mint Mayonnaise Fried Chicken Burger

A crispy fried chicken piece layered with cool mint mayonnaise and fresh veggies, tucked into a toasted bun for a satisfying one-person meal.

Cooking Steps

Method

Step 1 : Marinate

Mix buttermilk, salt, black pepper, red chilli powder, and ginger-garlic paste in a bowl. Coat the chicken well and marinate for at least 30 minutes (or up to 2 hours in the refrigerator for deeper flavour).

Step 2 : Prepare Mint Mayonnaise

In a small bowl, mix mayonnaise, finely chopped mint leaves, lemon juice, a pinch of black pepper, and salt. Mix well and refrigerate until assembling.

Step 3 : Coat the Chicken

Set up a three-step breading station: Bowl 1: Combine all-purpose flour, corn flour, paprika, salt, and black pepper. Bowl 2: Beat the egg in a shallow bowl. Bowl 3: Place breadcrumbs in a plate. Remove the chicken from the marinade and shake off excess marinade. First, coat the chicken well in the flour mixture and press firmly. Then dip into the beaten egg, ensuring it's fully coated. Finally, coat generously with breadcrumbs, pressing gently so they stick well for a crispy crust.

Step 4 : Fry

Heat oil in a deep pan over medium heat. Once hot, carefully slide in the coated chicken. Fry for 5–6 minutes per side, until golden brown and fully cooked through (the internal temperature should reach 75°C). Remove and drain on paper towels. Let it rest for 3–4 minutes before assembling.

Step 5 : Assemble

Lightly butter both halves of the burger bun and toast them in a pan until golden. Spread 1 tbsp of mint mayonnaise on the base bun and 1 tbsp on the top bun. Layer lettuce leaves on the base, followed by the fried chicken, cheese slice, onion rings, and tomato slices. Close with the top bun and press gently.

Step 6 : Quick Upgrade Ideas

Sprinkle a little chaat masala over the chicken before assembling for a tangy twist. Add sliced pickles or jalapeños for extra sharpness and crunch.

Step 7 : Air Fryer Option

After coating the chicken with flour, egg, and breadcrumbs, lightly spray or brush it with oil. Air fry at 190°C for 14–15 minutes, flipping halfway through, until golden and cooked through.
