Spicy egg curry cooked in poppy seeds and coconut gravy.

Preparation

Step 1 :

Hard boil eggs and peel them. Sprinkle the boiled eggs with a pinch of salt, turmeric powder and chilli powder.

Step 2 :

Heat oil in a pan and fry the eggs for 3-4 minutes. Remove the eggs and add bay leaves, cardamom and saute for 2 minutes.

Step 3 :

Now add onion paste and when it turns golden, add the garlic and ginger paste, chilly paste, grated coconut, green chillies and saute well for another 3-4 minutes.

Step 4 :

Add turmeric powder, salt and a little water to blend in the spices. Next goes in the poppy seeds paste with a continuous sauting for 5 minutes.

Step 5 :

Add the eggs and let them properly get mixed with the gravy. Add little water if required and cook covered in medium flame till the gravy dries out a bit. Serve with steaming rice.
