Aloo Wadiyan

A rustic Punjabi-style curry made with potatoes and spiced lentil wadiyan cooked in a flavourful onion-tomato gravy — a comforting dish that pairs perfectly with steamed rice or rotis.

Cooking Steps

Aloo Wadiyan

Step 1 :

Chop chillies, tomatoes, potato, onion, grate the ginger and chop the coriander leaves.

Step 2 :

Using a mortar and pestle slightly crush the wadi into smaller chunks.

Step 3 :

Turn on the instant pot to saute mode. Heat 2 tablespoons of oil. Add the crushed wadi, and saute for 2-3 minutes. Take out and keep aside.

Step 4 :

Add the remaining oil and add cumin seeds and bay leaves and allow them to splutter. Add chopped onions and saute until golden brown. Add diced potato, chopped tomatoes and all the spices and mix well. Add the wadiyan to the mixture and stir gently.

Step 5 :

Cancel the saute mode and close the instant pot with the led and set the pot to pressure cook mode and cook on high pressure for 5 minutes.

Step 6 :

Allow the pressure to release naturally. Open the lid and add garam masala and stir gently. Garnish with fresh coriander leaves and serve.
