Smoky Vegan Black Bean Soup

Step 1 :

Wash and chop carrots, finely chop onion and crush the garlic with garlic press. Toast and ground cumin. Thaw the frozen corn in boiling water.

Step 2 :

In a large skillet, heat oil on medium heat. Add carrots, celery and onion. Cook for 6-8 minutes, stirring occasionally.

Step 3 :

Add tomato paste, garlic, cumin, and smoked paprika. Cook stirring for 2 minutes until the garlic is golden and the tomato paste has browned. Prepare vegetable broth by adding hot water to the powder and add.

Step 4 :

Transfer the contents of the skillet to a slow heat in a bowl with beans, corn and the remaining broth. Cover and cook on high heat for four hours.

Step 5 :

Serve with avocado and coriander leaves.
