Marinated Tofu And Pumpkin Fried Rice

Step 1 :

Prepare the marinade for the tofu by mixing soya sauce, honey, rice vinegar or apple cider vinegar, grated ginger and ground black pepper in a bowl. Pat the tofu cubes dry and add to the marinade. Toss gently to coat well. Keep aside for 15 minutes.

Step 2 :

Next, cook the rice and pumpkin. Wash and drain the rice. In a pressure cooker, place the rice with 1.5 cups water, 1/4 tsp salt and pumpkin cubes. Close the lid with the whistle intact. After one whistle bring flame to sim and cook for 5 minutes. Turn off the flame and allow it to cool. Once cooled, open the cooker lid and remove the rice and pumpkin on a plate. Fluff with a fork.

Step 3 :

Heat the peanut oil in a pan. Saute garlic and ginger on a medium flame for 1-2 minutes. Add chopped onions, sesame seeds and saute until the onion is soft.
