Thai Shrimp Spaghetti
Step 1 :
Heat oil in a deep pan and throw in the garlic, onions and scallions (white part) & shrimp. Add salt & pepper. Quickly
sear on high heat for about 2 minutes on each side. Remove only the shrimp in a dish. DO NOT overcook. Remove before fully done. Leave the garlic-onion and oil in the pan.
Step 2 :
Next, add the veggies to the same pan. Sear for 2-3 minutes and remove. DO NOT overcook. Remove before fully done.
Step 3 :
Pour all the water into the same pan with 1 tsp salt and add the spaghetti. Stir so it doesn't stick. Once it comes to a simmer cover and cook till almost absorbed (not fully dry).
Step 4 :
Pour in the coconut milk and Thai curry paste. Mix really well till the paste dissolves and the sauce is uniform. Simmer on low till slightly thick, for about 5 mins or less.
Step 5 :
Add the veggies and shrimp back into the pan, and mix well to coat it all with that beautiful sauce. Then add the basil and green part of the scallions at the end. Stir for 2 mins.
Step 6 :
Serve garnished with basil and parmesan cheese.
