Step 1 :
To make the marzipan, first, blanch the almonds in hot water and then ground it into a fine paste. Add the castor sugar, icing sugar, and cinnamon powder followed by the refined flour and mix it all together.
Step 2 :
To cream, the marzipan, add the egg whites into the prepared mixture and fold it in well. Whisk it until it is light and creamy, using an electric mixer.
Step 3 :
Let the mixture sit in the refrigerator overnight.
Step 4 :
To prepare the icing, add the icing sugar with the egg whites and whisk it briskly in a back and forth motion. Gradually increase the speed of the mixer and whisk it until stiff peaks. Keep the icing in the refrigerator until use.
Step 5 :
After refrigerating the marzipan, roll it flat and thin using a rolling pin. Apply the icing over it and cut into small stars using a cookie cutter.
Step 6 :
Line a baking tray with butter and place the prepared star cookies onto it. Bake the cookies in a pre-heated oven for 12-15 minutes, until it is slightly browned. Then, let it cool down for some time and serve.
