Classic Mexican Street-Style Corncob

Mexican Corn on the cob is a favourite street food in Mexico. It is covered in creamy mayonnaise and topped with parsley, lime juice, cheese and paprika with unbeatable flavour.

Step 1 :

Open the corn, pull back the husk, remove all silks, keep the husk intact.

Step 2 :

Tie the husk on the other end.

Step 3 :

Boil the corns in salted water for 8-10 minutes.

Step 4 :

Drain the corns and keep aside.

Step 5 : To make mayonnaise

In a mixer jar, blend chilled milk cream, chilled vegetable oil, 1 tsp lemon juice, salt and mustard seeds, together.

Step 6 :

Blend the mixture into a thick paste. If it isn't thick enough, refrigerate it after blending.

Step 7 :

Apply soft butter over both the corns, entirely.

Step 8 :

Afterwards apply a thick coat of mayonnaise over it.

Step 9 :

Sprinkle few chopped parsley over the corn cobs.

Step 10 :

Sprinkle smoked paprika and garlic powder.

Step 11 :

Sprinkle grated cheddar cheese all over it.

Step 12 :

Lastly, squeeze lemon juice over each cob.
