Pav Bhaji Masala Cheese Omelette

A twist to the regular masala omelette wherein you make a pav bhaji style dry gravy for the centre filling and load it with cheese!

Preparation

Step 1 :

Heat oil in a pan. Add jeera and follow it with onions.

Step 2 :

Cook till the onions are golden brown.

Step 3 :

Add tomatoes and capsicum along with ginger. Sauté well. Add the remaining spices and salt. Cook till it forms a thick paste-like consistency.

Step 4 :

Meanwhile, whisk the eggs. Add a bit of salt and pepper and cook like a regular omelette over a slightly oiled pan.

Step 5 :

As the omelette cooks, form a partition in the centre.

Step 6 :

Add the bhaji masala and top it with grated cheese or cheese slices on one half.

Step 7 :

Fold the other half of the omelette on top.

Step 8 :

Take it off from the pan and serve hot with two slices of toasted brown bread and a glass of fresh juice.
