Apple Crumble Pie

Preparation

Step 1 :

First, make the pie crust. Sift together the dry ingredients. Add in the egg-vanilla essence mix and rub in the butter with your fingertips until the flour mix looks like coarse cornmeal; do not over knead if you want a flaky pie crust.

Step 2 :

Once the dough comes together (you can add a small spoon of cold water if there's difficulty binding the dough together), flatten the dough slightly and wrap it in cling film. Place in the refrigerator for 45 minutes.

Step 3 :

Take the chilled dough out of the fridge and put it on top of a sheet of butter paper or cling film. Place another sheet of butter paper or cling film over it and then carefully roll out the dough till it is a few inches larger than the size of the pie tin (if your pie tin is 8 inches, then dough should be 10 inches in diameter).

Step 4 :

Carefully, peel off the top butter paper. Lift the lower sheet and carefully lower the rolled-out dough onto the pie tin. Remove butter paper. Make sure the pie dough is fitting well across the pie tin. You can trim the edges with a knife or kitchen scissors. Place your pie tin in the freezer to rest for 30 mins.

Step 5 :

Preheat oven to 180C for 10 minutes. Put the chilled pie tin in the oven and bake blind (without filling) for 20 mins.

Step 6 :

To make the filling, take a large saucepan and heat together the chopped apples and butter till soft. Add sugar, cinnamon powder and a few drops of lemon juice. Cook till sugar melts.

Step 7 :

Take it off from the heat and mix in the cake crumbs. Keep aside.

Step 8 :

Now, make the crumble topping. Mix together the equal portions of flour, sugar and cold butter (about 50gms each) with your hands. It will resemble coarse crumbs.

Step 9 :

Transfer the filling into the partially-baked pie crust. Spread the crumble topping evenly on top and bake for 30 minutes or until the top is nicely golden-brown. Let it cool, then slice and serve.
