Ridge Gourd is a vegetable that can be cooked in a number of ways. Here's a Bengali curry recipe.

Preparation

Step 1 :

Dice the ridge gourd into small pieces. Make separate pastes of ginger, garlic and onion.

Step 2 :

Chop the coriander leaves and slit the green chillies. Heat oil in a pan and add the onion paste, as it turns a little golden add the green chillies and kalonji and keep sauting for 3 minutes.

Step 3 :

Add 3/4th grated coconut and keep stirring for 2 minutes. Now add the diced ridge gourd, salt and turmeric, mix well and cook covered in medium flame for 10 minutes.

Step 4 :

Pour in the sprouts, mix well. Add milk if you want and cook covered for another 10 minutes.

Step 5 :

Garnish with coriander leaves and remaining grated coconut. Serve hot with rice.
