Step 1 :
Beat the eggs, oil and brown sugar until thick and smooth. Add the cinnamon, lemon rind and grated carrot. Mix well.
Step 2 :
And add all ingredients together mix well. Rub the bottom of a cake tin with margarine or oil. Pour mixture into the cake tin. Bake at 180°C for 45 minutes, or until the centre. Leave to stand for 5 minutes in the tin. Cool on a cake rack. Sprinkle with icing sugar.
